My uncle would be proud. Your uncle would be proud too. That's perfectly fried fish right there. The trick to the most flavorful catfish is, you gotta brine it with buttermilk. And two tablespoons of Frank's Red Hot. If you don't, it's gonna be whack. I don't care what anybody else tells you.
